Castle and Beckett's quotes were very emotional, even more so because they coordinated them to match in bits and pieces, like how they both begin them with "The moment I met you, my life became extraordinary." There are so many callbacks in their vows, like how "partner in crime" reflects them falling in love while solving crimes together.
The subtle "always" tucked at the end is also a callback, as this word gets used continuously throughout their relationship and has a special meaning. After their wedding got canceled before, these vows left no dry eye in the audience.
Booth And Brennan - Bones

Booth and Bones were another couple that had a long friends-to-lovers journey before they finally got together. While saying vows, their usual roles get reversed, and Bones delivers vows that are emotional, while Booth goes for the funny witty lines. He describes how when they first stood there, he was trying to get away from her because she was irritating him.
He reminisces about how he told her he just needs to get his ducks in a row, and Brennan lovingly interjects with "I can be a duck". They're the vows so specific and special to them, they couldn't be more perfect.
