Even though he doesn't realize it yet, his subconscious feelings come through very clearly when he describes Jess in this fashion. Nick really believes that Jess is the greatest person he has ever met and that is so intensely romantic.

When Schmidt decides to walk away from Cece, it is quite heartbreaking. Mostly because they had both agreed that they like each other and wanted to be in a serious relationship together. But Schmidt felt like he wasn't going to be able to handle the things that came with Cece's career and instead of just having resentment build-up, he knew the best thing for Cece would be to just let her go. Even though it was terrible for him, he knew what he had to do because he cared about Cece so much.

The culmination of the 7-season long romance between Jess and Nick ends with their wedding day. And of course, their wedding day is anything but normal. So many things go wrong, and everything gets messed up but still, when Nick asks Jess if she wants to have the weirdest wedding of all time, Jess replies back without missing a beat that as long as she's getting married to Nick, she doesn't care what everything else looks like. It's perfect because it captures their messy yet solid at heart relationship.
"It's You And Me, It's Always Been You And Me."
"I want to raise this dog with you and I want to have babies, and eat good food, and laugh and take care of each other, and I want it to start tonight. It's you and me, it's always been you and me."
Nick's proposal to Jess was sweet but even more romantic was Jess' reply to him. She wants to spend the rest of her life with him and is so excited to do it and doesn't want to wait any longer. They both know that they have been in love with each other for the longest time. And this is the moment when their life together began and it always has been, and always will be with the both of them, together.

Nick is not a very cheesy or romantic guy on the surface. He doesn't usually do too many big romantic gestures or anything. But when Nick and Jess initially started dating, he pulled out all the guns and organized one of the best birthday parties of Jess' life. The amount of care that went into this spoke volumes about the kind of guy Nick was and how much he loved her.
Even though he usually was quite against all these sorts of big romantic gestures, he actually filmed himself and played it out in the theatre where all their friends were gathered. The very sweet fact of saving the coin, and also speaking about it so publicly, confirmed Nick really was a romantic at heart; it just took a while for him to show it.

The episode with the late musician Prince in New Girl is quite spectacular. The gang each individually go through a lot over the course of this episode learning new things about themselves and their friends. When Nick first says "I love you" to Jess, she is caught off-guard and simply points finger guns at him. But by the end of the episode, she's shouting how much she loves Nick. It's one of the sweetest and most romantic moments from their early years of courtship.

This is probably one of the most intense moments on New Girl. After a game of True American where Nick refused to kiss Jess on a dare saying that he didn't want to do it like this, everyone goes to sleep, and Jess goes to her room with her boyfriend Sam. At night, she hears something at the door and calls Nick to help her. They find out that it's a dog and Nick has to part with the women's jacket he had "stolen." While making their way back to their rooms, Nick pulls Jess into one of the most ionate kisses on the show. They make out and Nick leaves with just this single statement. It's intense, ionate, incredibly romantic, and cements the fact that Nick and Jess really a couple worth rooting for.
