Although the few Nirnroot north of Skingard, as Sinderion suggests, is a good place to start, it's nowhere near enough to collect all 100 you need for the questlne, which I find much more manageable to complete when using a single route.

Given the limited nature of Nirnroot, there's a very slim chance that you'll end up using or selling them before being able to complete the quest, but thankfully there is a somewhat reliable way to spawn the plant in one location. After unlocking the Deepscorn Hollow house just south of Leyawiin, there is a guaranteed spawn on top of the table in the bedroom, which is replaced every three days after being collected.

Given there's a total of 309 Nirnroot across Oblivion Remastered, it's unlikely you'll need to use this more time-consuming method, but it's a handy way to ively gain Nirnroot if you don't feel like farming to complete the quest.

Now that you've finished collecting all 100 Nirnroot, you can start to reap the rewards from having a high reputation with Skingrad's alchemist, offering much higher rates of return for your materials with a significant potion discount as well. Regardless of the difficulty of the Seeking Your Roots quest, with The Elder Scrolls IV: Oblivion Remastered potentially starting a new era for Bethesda, these collection-based quests are ones I wouldn't exactly miss moving forward.
