After beating the final boss in Princess Peach: Showtime!, there is still plenty to do in the post-game. Aside from new dresses and ribbons available for purchase, players can customize the Sparkle Theater itself with elaborate decorations. Previous Darkle bosses can be rematched with new challenges to complete for Sparkle Gems, new pictures for the Photo Album can be collected, and hidden Ninja Theets located in every standard level.
One important thing to note for would-be completionists: completing every piece of post-game content will take quite some time. For instance, every level will need to be replayed to find all Ninja Theets and collect any remaining ribbons or Sparkle Gems. Collecting every Sparkle Gem, in particular, is vital to 100% completion, as this will reward players with a fully decorated Theater and a special dress and ribbon.

New Peach Dresses & Stella Ribbons
After beating the final boss, several new, extravagant dresses become available for Peach and Stella, as shown by BeardBear on YouTube. Some outfits, like the Grape Dress and Ribbon, can simply be purchased from the Shopkeep with Coins. Other dresses and ribbons may require additional tasks, like obtaining every Sparkle Gem in Princess Peach Showtime!

Deck Out The Sparkle Theater
In addition to new dresses and ribbons, the Shopkeep will now have decorations for the Sparkle Theater available post-game. Each theater floor has different decorative items, ranging from chandeliers to ribbons for the pillars. Uniquely, these Sparkle Decorations are purchased with Sparkle Gems instead of Coins, so collecting every theater decoration for completionists will take longer than usual.

Complete Level Challenges & The Photo Album
Hide & Seek Ninja Theets
As seen in the above by video by UTAGaming, after the final cutscene, the Ninja Sparkla will call Peach over and announce a hide-and-seek challenge they are holding with their apprentices. Three Ninja Theets will now be hidden at each level (except basement levels with one Ninja Theet each). Finding every Ninja Theet in Princess Peach Showtime! will reward Peach with the Secret Dress decorated with shiny Theet faces.
Boss Level Challenges
Peach can battle previous Darkle Bosses and Madame Grape after beating Princess Peach Showtime! . These boss fights will now have optional challenges to abide by, which reward a Sparkle Gem for the first time each challenge is completed. The challenges range in difficulty but typically involve not taking any damage or avoiding hitting certain parts of bosses, and all three challenges can be obtained in one rematch.

Finish The Picture Album
Seven empty photo album slots cannot be filled until after beating Madame Grape. One photo is earned automatically after the final boss fight, but the remaining six involve challenging past bosses to a rematch. Completing the photo album requires beating all three challenges for each boss in Princess Peach Showtime!

Rehearsal Level Gold Trophies
While not necessarily locked behind the post-game, waiting to get the gold trophy for each Rehearsal level is recommended until after the final boss. It may take several runs to perfect the movement needed for a gold rank for all Rehearsals, as they are much more difficult than standard levels and have strict time limits.
However, getting a gold rank rewards Peach with a unique dress themed after each costume in Princess Peach: Showtime!, which could be worth it for avid fans.
